Microgreens FAQ: What Are Microgreens?
What are microgreens?
Microgreens are young vegetable greens, harvested 7-14 days after germination when the first true leaves appear. They’re smaller than baby greens but more developed than sprouts. Microgreens are packed with flavor and nutrients — up to 40 times the nutrient density of mature vegetables, according to research from the National Institutes of Health. Our microgreens FAQ covers everything you need to know.
How are microgreens different from sprouts?
Microgreens are grown in soil and harvested by cutting the stem above the soil line. Sprouts are germinated in water and eaten whole, including the root. Microgreens have more developed leaves, better flavor, and are generally considered safer because they’re grown in soil rather than water. This FAQ explains the key differences.
What varieties of microgreens do you grow?
We grow several core varieties including broccoli, sunflower, pea shoot, and radish microgreens. We’re always experimenting with new varieties, so check our shop for the current selection. Our FAQ is updated as we add new varieties.
Microgreens FAQ: Nutrition & Health
Are microgreens nutritious?
Yes! Microgreens are extremely nutritious. They contain concentrated levels of vitamins A, C, E, and K, plus minerals like iron, zinc, and potassium. According to studies referenced in our microgreens FAQ, microgreens can have 4-40 times the nutrient density of mature vegetables. A small handful delivers the nutrition of a large bowl of salad greens.
How should I eat microgreens?
Microgreens are best eaten raw. Add them to salads, sandwiches, smoothies, soups, or use them as garnishes. Check out our recipes page for ideas. We recommend adding microgreens at the end of cooking to preserve their nutrients.
How much should I eat?
A handful (about 1 ounce) per day is a great target. You can eat more, but even small amounts provide significant nutritional benefits. Our microgreens FAQ suggests starting with a small serving and experimenting with different varieties.

How should I store my microgreens to make them last?
Keep your microgreens refrigerated at 35-40°F in the clamshell container they came in. Do not seal them in plastic bags — trapped moisture causes decay. Do not wash until ready to eat. When stored properly, microgreens stay fresh for 7-10 days. Peak freshness is days 1-5, so enjoy them early for the best flavor and nutrition.
How do I know if my microgreens have gone bad?
Use the smell test: if it smells fresh and green, it is good. If it smells sour, ammonia-like, or slimy, it is time to compost. Visible mold or mushy texture means it is past its prime. When in doubt, throw it out.
Should I wash my microgreens before eating?
Only wash microgreens right before you eat them. Rinse gently under cold water and pat dry with a paper towel or spin in a salad spinner. Washing ahead of time adds moisture that speeds up spoilage. Microgreens are best enjoyed raw — cooking destroys their delicate nutrients and flavor. For hot dishes like stir-fries, soups, and pizzas, add microgreens after removing from heat.
